Blogger's Gift: yummy vermicelli noodles with festive season leftovers!!

We all prepare lavish food during our festive season, most so during Diwali and usually buy ingredients in bulk so as not to dash out for anything at last minute....So like every other person, I had a lot of left over ingredients in my kitchen after the festive season(Durga Puja+Diwali). 
Though, i used up most of them by and by, vermicelli noodles were staring at me from the freezer every day...i was at loss what to do with them, since I did not want to make kheer( a kind of Indian pudding), which is the most common thing to make with vermicelli here in India, neither I had the time to make anything very fancy!!

Then, a most welcome coincidence happened, aipi of US Masala Blog posted a recipe of vermicelli stir fried noodles..and it was just perfect for me!!!
So, i promptly made it one weekend for breakfast and here it is!!

All the ingredients, except curry leaves were already in my kitchen(which I did not add in the dish) and the noodles turned out tasty.
They were very light in texture, much more crisp than regular noodles, yet had a distinct Indian flavor.
I loved this recipe so much that I made this once more already( after the maiden attempt that is), this time adding the curry leaves.


Thanks a ton Aipi for the yummy recipe!!... it not only saved my vermicelli from going to the bin and also gave me a quick easy dish to make when in dire need of both cooking ideas and time!!

Yes this indeed a very tasty dish. It is a regular feature in our house for B.Fast - at least once/week.
